This Italian-style stuffed tomato side dish is made in the air fryer and has brown rice filled with garlic, Parmesan cheese, fresh basil, and toasted nuts.
Air-Fried Italian Stuffed Tomatoes
Ingredients
- 4 medium tomatoes
- olive oil, as needed
- 1 cup cooked brown rice
- ⅓ cup freshly grated Parmesan cheese
- ¼ cup crumbled goat cheese
- ¼ cup chopped toasted walnuts
- 2 tablespoons chopped fresh basil, divided, or more to taste
- 2 cloves garlic, minced
- ¼ cup Italian-seasoned bread crumbs, divided
- 1 tablespoon olive oil

Directions
Take off the tomato’s top and use a melon baller to take out the flesh, leaving the sides and bottoms about 1/4 to 1/2 inch thick. Throw away the tomato tops and meat. Put olive oil on the bottom of an air fryer basket.
In a medium bowl, mix cooked rice, Parmesan cheese, goat cheese, walnuts, garlic, and 1 tablespoon of basil. In a small bowl, mix together the bread crumbs and 1 tablespoon of olive oil. Mix the rice and bread crumbs together and then stuff the tomatoes with them. Put the stuffed tomatoes into the air fryer basket that has been made.
For about 15 minutes, cook in an air fryer set to 370 degrees F (188 degrees C) until the topping is golden brown, the filling is hot, and the tomatoes are soft. Add the rest of the basil as a garnish.
