Ingredients

  • 1/2 cup butter softened
  • 1/2 cup white sugar
  • 1/4 cup dark brown sugar or light brown sugar
  • 2 eggs room temperature
  • 1 tbsp vanilla
  • 1 cup bananas approx 2 medium-sized bananas
  • 1 1/4 cups all-purpose flour
  • 1 cup rolled oats
  • 3/4 tsps cinnamon
  • 1/8 tsp nutmeg optional
  • 1 tbsp cornstarch
  • 1 1/2 tsps baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt

Instructions

Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius). Place parchment paper on the bottom of the pan as well as on two sides of the pan so that the cake can be removed with ease.

Prepare the two sides by lightly greasing them without using parchment paper, and then set them aside. Bananas should be mashed and then left aside.

Blend together the following ingredients in a bowl of medium size: flour, cornstarch, cinnamon, baking powder, baking soda, and salt. Mix everything together, then leave it aside.

Put the butter that has been softened, the brown sugar, and the white sugar into a large bowl. To achieve a light and fluffy texture, beat it for two to three minutes at a medium pace. It is imperative that you scrape the sides of the dish.

Add the eggs, vanilla extract, and bananas that have been mashed. Continue mixing at a medium speed until the mixture is completely smooth.

When the dry ingredients have been incorporated, use a spatula to gently fold them together until a batter is formed. To avoid overmixing!

Evenly distribute the batter into the pan that has been prepared. Cinnamon and white sugar should be combined in a small cup and then stirred together. After that, sprinkle it evenly on top. This will result in a sweet and crispy topping for you.

35–45 minutes of baking time, depending on the oven you are using. My time was forty-five minutes. Wait till it has cooled, then slice it and enjoy!
