These wonderful nibbles are called Cheesy Monacos, and they mix the crunchiness of Monaco biscuits with a cheesy topping that is rich and decadent. Ingredients

  • 2 tbsp Butter
  • 1 cup Mixed Vegetables (finely chopped; options include onions, carrots, and capsicum)
  • 1 tbsp All-Purpose Flour
  • ⅓ cup Milk
  • 3 tbsp Schezwan Sauce
  • ½ tsp Dried Oregano or Mixed Herbs
  • ½ tsp Paprika
  • ¼ cup Grated Cheese (cheddar or mozzarella works well)
  • Chili Flakes (to taste)
  • 15 Monaco Biscuits
  • 3 Cheese Slices (quartered)

Instructions

Melt the butter in a saucepan over a heat setting of medium. After adding the vegetables that have been finely chopped, sauté them for approximately two to three minutes until they become more tender.

After the vegetables have been sautéed, sprinkle the all-purpose flour over them and mix it thoroughly. Continue cooking for a further two minutes to get rid of the taste of uncooked flour.

In order to prevent lumps from forming, gradually pour in the milk while stirring it continually. After the mixture has reached the desired consistency, take it from the fire.

Combine the shredded cheese, Schezwan sauce, oregano, and paprika by stirring them together. Make sure that the cheese melts and that all of the ingredients are thoroughly mixed together.

Take a Monaco biscuit and add a slice of cheese that has been quartered on top of it. A teaspoon of the veggie mixture should be spooned on top, and then extra shredded cheese and chili flakes should be sprinkled on top at your discretion.

The Cheesy Monacos should be arranged on a serving tray, and they can be enjoyed warm with your preferred dip or in their original form.

Tips
