Instructions
After placing the tomatoes that have been cut in a strainer, sprinkle them with one teaspoon of salt and then set them aside. To allow the extra moisture to drain away, you should wait for around half an hour.
The tomatoes that have been drained, the onion, the basil, the oregano, the sugar, the cinnamon (if you are using it), and the black pepper should all be mixed together in a big bowl. Completely combine the ingredients.
Using a whisk, the flour and baking powder should be combined in a separate basin before being taken into consideration. While stirring, add the flour mixture to the tomato mixture and continue to whisk until the two ingredients are almost entirely combined.
It is recommended that a big skillet be heated over medium heat with a quarter of an inch of oil. The tomato combination should be placed in the hot oil in a gentle manner, with the tomatoes being flattened to some degree as they are placed in the oil. Take heaping spoonfuls of the mixture.
The sides should be fried for two to three minutes apiece until they reach a golden brown color. Position on a dish that has been prepared with paper towels prior to placement.
When you are ready to prepare the dip, place all of the ingredients in a small bowl and mix them together until they are completely combined. Put the dish in the refrigerator when you are ready to serve it. It is recommended that the tomato fritters be served hot, and the sun-dried tomato yogurt dip should be provided on the sides. Have a good time!
Tips
It is possible to eliminate excess moisture from the tomatoes by letting them to drain, which ultimately leads to fritters that have a crispier texture. After cooling the batter for half an hour, the fritters are better able to keep their shape when they are fried. This is because the batter has maintained its shape.
Adjust the amount of flour that you use in accordance with the amount of moisture that is present in your tomatoes. However, the batter should still be pourable, despite the fact that it should be thick. To prevent the oil from becoming congested and to maintain a consistent temperature in the oil, it is recommended to fry the fritters in large batches.
