Tortilla de Patatas Recipe: A simple Spanish dish called Tortilla de Patatas is made with potatoes, onion, eggs, salt, and oil. It is also called a Spanish omelette or tortilla de papas.
Tortilla de Patatas Recipe
Ingredients
- 2 ½ cups extra virgin olive oil
- 3 medium Yukon Gold Potatoes , (about 2 lbs), peeled and thinly sliced (about ¼ inch thick)
- 1 yellow or white onion
- 6 eggs , beaten
- 2 teaspoons crushed sea salt , divided
Instructions
Put olive oil in a big pan and set it on medium heat. Put in the potato and onion. There should be a lot of olive oil on them (add more if needed). Add ½ teaspoon of sea salt to taste.
Keep the heat on medium-high and keep the boil going for 8 to 12 minutes, stirring every now and then, until the potatoes are just fork-tender. Don’t cook too long.
Use a strainer to drain the potatoes, but save the oil. If you think it needs more salt, give it a taste. Let it cool down for a while.
At the same time, break the eggs into a bowl and add about ½ tsp of salt. Mix the eggs together. Toss the potato and onion in the oil to coat them.
Put a little oil in the bottom of a nonstick 10-inch pan that is on high heat. Put the potato mix in when it’s hot and cook on high for one minute. Turn down the heat to medium-low, and cook for five minutes.

Make sure the tortilla doesn’t stick by running a rubber spatula along the edges. This will also help it keep its shape.
If the sides and middle start to get firmer, it will still be a little runny in the middle. Place a large plate (bigger than the pan) over the omelette and flip it onto the plate. The tortilla de patatas should now have the cooked side facing up.
Now slide the omelette back into the pan slowly. Point the omelette’s back so that it fits into the pan’s back. Then, use the spatula to help move the rest of it from the plate to the pan. This will keep the omelette’s edge round. Use the spatula to press the sides in and under again.
For one minute, cook on high heat. Then, cook on low heat for two to three more minutes, or until done. When it feels set in the middle and a knife or stick stuck in the middle comes out clean, it’s done.
When the tortilla de patata is done, flip it back over onto a plate and serve. You can serve it hot or cold.

You can eat this dish hot, cold, or room temperature. Cover leftovers and put them in the fridge.
