Traditional South Indian Rava Kesari In Just 20 Minutes: Semolina, also known as rava, is combined with ghee, sugar, and fragrant saffron to make Rava Kesari, a classic sweet dish from South India. Rava Kesari is produced by combining these ingredients.

Ingredients
- 1 cup Rava (semolina)
- ¾ cup Sugar
- 2 cups Water
- ¼ cup Ghee
- 10-12 Cashews
- 10-12 Raisins
- A pinch of Saffron (soaked in 2 tbsp warm water)
- ½ tsp Cardamom powder
- A few drops of orange or yellow food color (optional)
Method
- Ghee, one tablespoon at a time, should be heated in a skillet while the Rava is being roasted. After the rava has been added, roast it over a low flame until it develops a golden yellow color and a delicious aroma. Place it in the background.
- Heat the water until it boils. In a separate saucepan, bring two cups of water to a boil. Prepare the water by stirring it. Both the food coloring and the saffron that has been steeped should be included in the solution.
- The Kesari should be prepared by gradually adding the roasted rava to the water that is boiling while stirring it regularly to prevent lumps from forming. This should be done in order to minimize the risk of lumps forming. When all of the water has been absorbed, continue to cook the mixture over a low burner.
- After the sugar has been well mixed into the mixture, it should be swirled in until the mixture is thoroughly combined until the sugar completely dissolves. Following the addition of the remaining ghee, the cooking process should be continued until the mixture is able to slide off the sides of the pan.
- Include Nuts and Flavorings: Add the cardamom powder and whisk to integrate it with the other ingredients. After the cashews and raisins have been sautéed in ghee until they have a golden color, they should be added to the kesari to complete the dish.
